Ingredients:
- 1 pound raw shrimp, peeled and deveined (tails on or off, your preference)
- 1 medium zucchini, spiralized into noodles (zoodles)
- 2 tablespoons olive oil
- 2 tablespoons butter
- 3 cloves garlic, minced
- 1/4 cup dry white wine (or chicken broth)
- 1/4 cup lemon juice
- 1/2 teaspoon dried oregano
- 1/4 teaspoon red pepper flakes (optional)
- Salt and freshly ground black pepper, to taste
- Fresh parsley, chopped (for garnish, optional)
Instructions:
- Prep: Pat the shrimp dry with paper towels. In a large bowl, toss the zoodles with 1 tablespoon of olive oil and a pinch of salt. Season the shrimp with salt and pepper.
- Air Fry the Zoodles (Optional): Preheat your air fryer to 400°F (200°C). Spread the zoodles in a single layer in the air fryer basket and cook for 3-4 minutes, shaking the basket halfway through, until slightly softened. Remove the zoodles from the air fryer and set aside.
- Cook the Shrimp Scampi: In a small bowl, whisk together the remaining olive oil, butter, garlic, white wine (or broth), lemon juice, oregano, and red pepper flakes (if using).
- Preheat your air fryer to 400°F (200°C) again (if you didn’t preheat for the zoodles). Arrange the shrimp in a single layer in the air fryer basket. Pour the prepared sauce over the shrimp.
- Air Fry the Shrimp Scampi: Cook the shrimp for 5-7 minutes, shaking the basket halfway through, until the shrimp are pink and opaque and cooked through.
- Serve: Carefully remove the basket from the air fryer. Plate the cooked zoodles (if using) and top with the shrimp scampi. Garnish with fresh parsley (optional), and serve immediately.
