Keto Moussaka
Ingredients:
- For the Eggplant Layer:
- 2 large eggplants, sliced lengthwise
- Salt
- Olive oil for brushing
- For the Meat Sauce:
- 1 ½ pounds ground beef or lamb
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14 ounces) crushed tomatoes
- 1 teaspoon dried oregano
- 1 teaspoon ground cinnamon
- Salt and pepper to taste
- For the Bechamel Sauce:
- 4 tablespoons butter
- 1/4 cup almond flour
- 2 cups unsweetened almond milk
- 1/4 cup grated Parmesan cheese
- 2 egg yolks
- Salt and pepper to taste

1. Prepare the Eggplants:
- Slice the eggplants lengthwise into 1/4-inch thick slices.
- Lay them on a baking sheet and sprinkle with salt. Let them sit for about 20 minutes to draw out moisture.
- After 20 minutes, rinse the eggplant slices and pat them dry with a paper towel.
- Preheat your oven to 375°F (190°C).
- Brush the eggplant slices with olive oil and place them on a baking sheet.
- Roast in the preheated oven for about 15-20 minutes, or until they are soft and slightly browned. Remove from the oven and set aside.
2. Prepare the Meat Sauce:
- In a large skillet, cook the ground beef or lamb over medium heat until browned.
- Add the chopped onion and minced garlic and cook until the onion is soft and translucent.
- Stir in the crushed tomatoes, dried oregano, ground cinnamon, salt, and pepper.
- Simmer the sauce for about 10-15 minutes, allowing the flavors to meld. Remove from heat.
3. Make the Bechamel Sauce:
- In a saucepan, melt the butter over medium heat.
- Whisk in the almond flour until it forms a smooth paste.
- Gradually add the almond milk while continuing to whisk, ensuring no lumps form.
- Cook and stir the mixture until it thickens, which should take about 5-7 minutes.
- Remove from heat and stir in the grated Parmesan cheese, egg yolks, and season with salt and pepper.
4. Assemble the Moussaka:
- In a greased 9×13 inch baking dish, layer half of the roasted eggplant slices.
- Spread the meat sauce evenly over the eggplant.
- Add the remaining eggplant slices on top.
- Pour the bechamel sauce over the top, spreading it evenly.
5. Bake and Serve:
- Bake in the preheated oven at 375°F (190°C) for 30-40 minutes, or until the top is golden brown.
- Remove from the oven and let it cool for a few minutes before serving.
