This delicious keto beef stew is a perfect one-pot meal for beginners. It’s hearty, flavorful, and comes together with minimal effort.
Ingredients:
- 1 ½ pounds beef chuck roast, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon salt
- ½ teaspoon black pepper
- 1 medium onion, diced
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 tablespoon tomato paste
- 1 bay leaf
- 1 cup chopped zucchini (optional)
- ½ cup chopped mushrooms (optional)
- Fresh parsley (for garnish, optional)
Instructions:
- Brown the beef: Pat the beef cubes dry with paper towels. Season generously with salt and pepper. In a large pot or Dutch oven, heat olive oil over medium-high heat. Add the beef cubes in a single layer and cook without moving for 5–7 minutes, or until browned on one side. Tip: Don’t crowd the pan! If your pot is too small, brown the beef in batches.
- Sauté the aromatics: Once browned, remove the beef from the pot and set aside. Add the diced onion and celery to the pot and cook over medium heat for 5 minutes, or until softened. Stir in the minced garlic and cook for another minute, until fragrant.

Stir in the tomato paste and bay leaf. Bring to a boil, then reduce heat to low, cover the pot, and simmer for 1 ½ hours, or until the beef is tender.
- Add the vegetables (optional): If using, add the chopped zucchini and mushrooms to the pot. Stir to combine and simmer for an additional 10 minutes, or until the vegetables are tender-crisp.
