This creamy and delicious Instant Pot Chicken Alfredo is perfect for a weeknight meal. It’s simple to make and requires minimal effort, making it ideal for beginner cooks.
Prep Time: 5 minutes Cook Time: 6 minutes Natural Pressure Release: 10 minutes Total Time: 21 minutes Servings: 4
Ingredients:
- 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 3 cloves garlic, minced
- 1/2 cup dry white wine (optional)
- 1 1/2 cups chicken broth
- 1 cup heavy cream
- 8 ounces fettuccine pasta
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley (optional)
Instructions:
- Season the Chicken: In a bowl, toss the chicken with olive oil, salt, and pepper.
- Sauté the Chicken (Sauté Function): Set your Instant Pot to the “Sauté” function. Once hot, add the chicken and cook for 3-4 minutes per side, or until golden brown. Remove the chicken from the pot and set aside on a plate.
- Deglaze the Pot (Optional): If there are browned bits stuck to the bottom of the pot, pour in the white wine (if using) and scrape with a wooden spoon to loosen them. Let the wine simmer for a minute, then deglaze with a splash of chicken broth if needed.
- Add Liquids and Pasta: Pour in the chicken broth and heavy cream. Add the fettuccine pasta, breaking it in half if it doesn’t fit comfortably. Nestle the chicken pieces back on top of the pasta.
- Pressure Cook: Close the lid and ensure the pressure release valve is set to “Sealing.” Select “Manual” or “Pressure Cook” and set the time for 6 minutes on High Pressure.
- Natural Pressure Release: When the cooking time is complete, let the pressure release naturally for 10 minutes. Then, carefully release any remaining pressure manually according to your Instant Pot’s instructions.
- Stir in Cheese: Open the lid and carefully stir in the grated Parmesan cheese until melted and sauce is creamy. Season with additional salt and pepper to taste.
- Serve: Garnish with fresh parsley (optional) and serve immediately. Enjoy your delicious Instant Pot Chicken Alfredo!
Tips for Beginners:
- Don’t overcrowd the pot. If your chicken breasts are large, you can cut them into smaller pieces or cook them in batches.
- Be careful not to burn the garlic. Add it after the chicken has browned slightly and cook it just until fragrant.
- If the sauce seems too thin after adding the cheese, you can simmer it on the “Sauté” function for a few minutes to thicken it up.
- Feel free to add your favorite vegetables to this recipe, such as broccoli, peas, or mushrooms. Just add them to the pot with the pasta.
