Beginner-Friendly Keto Cloud Bread
These fluffy, delicious Keto Cloud Breads are perfect for beginners! They’re low-carb, gluten-free, and require minimal ingredients and effort.

Ingredients:
- 3 large eggs, separated (make sure yolks are clean!)
- 3 tablespoons softened cream cheese
- 1/4 teaspoon cream of tartar
- Pinch of salt
- Optional: 1/2 teaspoon dried herbs (like chives, oregano, or garlic powder) for savory bread, or 1/2 teaspoon sweetener for sweet bread
Instructions:
- Preheat the oven: Turn your oven on to 300°F (150°C) and line a baking sheet with parchment paper.
- Separate the eggs: Carefully crack the eggs, separating the yolks from the whites. You can use your eggshells to hold the yolk while you transfer the white to a separate bowl. Be very careful not to get any yolk in the whites! Yolk can prevent the whites from whipping up properly.
- Whip the egg whites: In a clean, dry bowl, use a hand mixer or stand mixer to whip the egg whites with the cream of tartar on high speed until stiff peaks form. Stiff peaks means that when you lift the beaters, the peaks hold their shape and don’t droop over.
- Mix the yolk and cream cheese: In a separate bowl, use a spoon or mixer to beat together the cream cheese, egg yolks, salt, and your optional flavoring (herbs or sweetener).
- Combine gently: Gently fold the whipped egg whites into the yolk mixture with a rubber spatula. Be careful not to deflate the air bubbles in the whites! Fold until just combined.
- Shape and bake: Spoon the batter onto your prepared baking sheet, making 4 equal-sized rounds. Use the back of a spoon to smooth the tops if needed. Bake for 25-30 minutes, or until golden brown.
- Cool and enjoy! Let the cloud bread cool completely on the baking sheet before digging in.
Tips:
- Make sure your egg whites are completely free of yolk for best results. Any yolk can prevent them from whipping up properly.
- Use room temperature cream cheese for easier mixing.
- Don’t overmix the batter once you’ve combined the egg whites. You want to keep those air bubbles for a light and fluffy texture.
- If your cloud bread browns too quickly, reduce the oven temperature to 275°F (135°C) and bake for a few extra minutes.
- Get creative with flavors! Try adding different herbs and spices for savory bread, or a touch of stevia and vanilla extract for a sweet treat.
