Feta & Herb-Crusted Salmon (For beginners cookers)
This recipe is a perfect introduction to both keto and baked fish for beginners. It’s simple, flavorful, and comes together quickly for a satisfying weeknight meal.

Ingredients:
- 2 salmon fillets (around 6 oz each), skin-on
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped fresh parsley
- 2 tablespoons chopped fresh chives
- 1 tablespoon olive oil
- 1/2 lemon, zested and juiced
- 1/4 teaspoon garlic powder (optional)
- Salt and freshly ground black pepper
Instructions:
- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- In a small bowl, combine the feta cheese, parsley, chives, lemon zest, olive oil, and garlic powder (if using). Season with salt and pepper to taste.
- Place the salmon fillets skin-side down on the prepared baking sheet. Pat the tops dry with paper towels to ensure crispy skin.
- Spread the feta-herb mixture evenly over the tops of the salmon fillets, pressing gently to adhere.
- Bake the salmon for 15-20 minutes, or until the flesh is opaque and flakes easily with a fork. The internal temperature of the thickest part of the salmon should reach 145°F (63°C).
- While it cooks, squeeze the lemon juice over the top in the last 2 minutes of baking for an extra zing (optional).
- Remove from the oven and let it rest for 5 minutes before serving.
Tips:
- For a richer flavor, use full-fat feta cheese.
- If you don’t have fresh herbs, you can substitute 1 teaspoon each of dried parsley, dill, and oregano.
- Serve your salmon with roasted vegetables like broccoli, asparagus, or zucchini for a complete keto meal.
- Leftover salmon can be stored in an airtight container in the refrigerator for up to 3 days.
