Easy Keto Cauliflower Rice (Beginner-Friendly)
This recipe is a perfect introduction to creating keto-friendly rice for those new to the kitchen. It’s simple, flavorful, and can be easily customized to your taste.
Prep Time: 5 minutes Cook Time: 15 minutes Total Time: 20 minutes Servings: 2
Ingredients:
- 1 head of cauliflower, cut into florets
- 2 tablespoons butter
- 1/4 cup chicken broth (optional)
- Salt and pepper to taste
- 1/4 cup chopped fresh herbs (optional – parsley, chives, cilantro)
Instructions:
- Rice the cauliflower: If you have a food processor, pulse the cauliflower florets in batches until they resemble rice grains. Alternatively, grate the florets using the coarse side of a box grater.
- Cook the rice: Heat the butter in a large skillet over medium heat. Add the cauliflower rice and cook, stirring occasionally, for 5-7 minutes, or until softened slightly.
- Add moisture (optional): If the rice seems dry, add a splash of chicken broth and continue cooking, stirring frequently, until the broth evaporates and the rice reaches your desired texture.
- Season and serve: Season the rice with salt and pepper to taste. Remove from heat and stir in chopped herbs, if using. Serve immediately as a side dish with your favorite keto-friendly protein.
Tips:
- For added flavor, try sauteing minced garlic or onion with the butter before adding the cauliflower rice.
- You can experiment with different seasonings like turmeric, curry powder, or smoked paprika.
- Leftover keto rice can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a pan or microwave.
